An easy healthy dessert

If you are like me, you probably desire something sweet after your evening meal.  I have come up with a very simple dessert which not only takes minutes to prepare but it also satisfies that sweet tooth.  Remember that you’re aiming to keep your body more alkaline than acidic in order to keep illnesses away.  Acidic foods are those that are heavy such as meats, eggs, grains, etc. whereas alkaline foods include fresh fruits and vegetables.  I am not saying not to include acidic foods but if you consume them, just be mindful of keeping the body balanced by eating foods that are alkaline.

Take an organic apple (I use dark red delicious apples since they are under $2 a pound for organic), cut it in half and then in half again.  Use a paring knife to trim the seeds from the center.  Put the quarter on a flat cutting board with one side down and begin cutting very thin slices.  Put all the slices in a medium size mixing bowl.  Then take a lemon, cut it in half and squeeze the juice generously over the apple slices.  Add a dusting of cinnamon and cardamom powder.  Now you can add other things like slivered almonds, pomegranate seeds, cocoa nibs and a drizzling of maple, rice or agave syrup.  Mix all ingredients gently and place in a small dessert dish.

This dessert is low in calories, satisfies the sweet tooth and is gluten-free.  As for nutritional benefits,  the apples are a great source of Vitamin A (beta carotene) and magnesium.  The fresh lemon juice provides Vitamin C, the nuts and seeds are great sources of the B vitamins and zinc.  Enjoy!
