This week we learned a bit more about using the dehydrator for “cooking” food. Unlike an ordinary oven, it only reaches 118 degrees. We prepared kimchee dumplings with sesame ginger foam, soft corn tacos with pico de gallo and guacamole, pizza crust with a raw tomato sauce and seaweed salad done in a ring mold. Plating is a major component of the learning process at The Academy and is highly stressed as is evident in the photos.
